ingredients

  • 2 (10 3/4 ounce) cans minestrone soup, with
  • 2 (10 3/4 ounce) cans water
  • 2 teaspoons beef bouillon granules, dissolved in the cans of water
  • 2 (16 ounce) cans pinto beans, drained
  • 2 (10 ounce) cans rotel
  • 2 lbs cooked ground beef
  • 1 medium onion (optional)
  • 1 medium bell pepper (optional)

directions

  • Brown ground beef in skillet (with onions and green bell peppers if desired).
  • Drain meat.
  • Combine all ingredients in large pot and heat through.
  • Serve with corn bread or crackers.

  1. Something seems a 'tad' off here, the title of this is "THREE CAN SOUP", but with 2 cans ministrone + 2 cans water + 2 cans pinto beans + 2 cans rotel, in my math classes that would add up to 8 can soup, not 3 can soup. Just asking.

  1. I thought this was really delicious considering how fast & easy it was. I'm glad one other reviewer mentioned condensed minestrone because in my mind I was thinking Progresso. But yes a 10 3/4 oz can is Campbell's condensed. I made a batch and a half for my family of 5 & leftovers. I used 2 cans Rotel & 1 can stewed tomatoes. Rotel gave it a nice little tingle on the tongue. Also only 2 cans of beans, 1 kidney 1 great northern. Otherwise followed the rest exactly. Thanks for a meal that was yummy & done in about 30 mins.

  2. This brings back memories of being a girl scout leader and making this at camp. Hearty warming and great tasting. Alone with the onions and peppers I just had to add 2 cloves of garlic. Thanks for the memories!

  3. I would love to give this 4.5 stars if the ratings would let me! I made this pretty much to the recipe, except I subbed one can of regular diced tomatoes for one of the cans of Rotel because my younger kids don't like food too spicy. I also added 2 medium sized golden potatoes-cubed- because I had them left over from another meal. I threw in a couple of cloves minced fresh garlic (about 3 cloves) and I also added the green peppers. I cooked the onions and green peppers with the beef and made sure to season the beef with salt and pepper and some of the beef bullion while it was cooking before adding in all the other ingredients. It came out amazing and was a perfect meal for a cold night. I served it with buttermilk biscuits and the hubby said we have to have this on a regular basis.

  4. This is really easy to make and my family loved it! The next time I make it, I will use one can of Rotel and one can of plain tomatoes as it was a bit too spicy for my daughter. I served it with cornbread which made it a complete meal.

  2. Use mild Rotel the flavor of the chilies, although mild in heat adds a lot. I sometimes use tomato juice vs water. I serve a loaf of fresh Italian bread and butter with garlic salt on the side. It makes for a very filling and tasty lunch on a cold winter’s day. As children, soup and half a sandwich was our lunch on many days. Campbells condensed tomato soup mixed with a can of whole milk made a creamy and hearty soup to have with grilled cheese or any other sandwich. We always had lunch meat of some type in the fridge along with cheese. So a quick ham and cheese sandwich served with a cup of hot tomato soup was a quick and easy lunch for mom to make to feed 4 little ones. The only struggle was who wanted Mayo vs who wanted mustard until mom mixed Mayo and mustard in a squeeze bottle. Then it was all good and 2 sandwiches fed us all.

  3. Amazingly delicious for such an easy recipe!!! I thought 3 pounds of meat sounded like a lot, so I cut it back to 1 1/2 pounds. Everyone said that was just right -- and I used ground turkey. We sprinkled some shredded Parmesan cheese on it -- and it was wonderful. It was a little on the spiicy side for the my grandchildren. I think my daughter is goiing to try substituting some stewed tomatoes for the rotel. They aren't fond of sour cream -- so the suggestion of one of the other reviewers didn't work for the kids in the family. Thank you for posting such an easy soup to make -- yet so tasty. Bobbie

  4. This soup/stew had an excellent flavor. I halved the recipe (1 can each beans, rotelle, minestrone) and used the onions, peppers along with 1/4 c. of shredded carrots I had on hand. Instead of ground beef, I used spicy turkey sausage and some leftover pork tenderloin, cubed. Like other reviewers, I served this with sour cream and shredded cheddar. The perfect simple, tasty meal for a cool Sunday night. Thanks!
